Panini Recipes for Pizzadillas
Here’s one of my favorite simple panini recipes. I figured I’d keep with the pepperoni theme. Great for kids, football fans and couch potatos!
Here’s what you need:
Pepperoni
mozzarella
flower tortillas
spaghetti sauce
This works best if you heat your tortillas before you prep the sandwiches. Put each one in the heated panini grill for about 30 seconds. Next, lay out your tortilla and put shredded mozzarella on one half of it. Then put on your pepperoni. I overlap the pepperonis on the mozzarella, no use skimping like the pizza places do. To make it extra special, lay the pepperoni over the edge of the tortilla so it gets that crispy pepperoni edge you get on pizza. You can add other pizza toppings if you want, I just like pepperoni. Finally, fold the tortilla in half. This is much easier when you have preheated the tortillas. That’s why we did it.
Now, put them on your grill as many as will fit without touching. Cook for 3-10 minutes until grill lines start to brown, the cheese is gooey and the edges of the pepperoni sticking out get crispy. While they are cooking microwave the sauce to warm it.
When they are done, cut them into slices for dipping in the sauce.
These make great party snacks, kids treats, couch potato munchies or easy lunches. You can set out the toppings and have the kids make their own pizzas this way too. Great family fun!
